The goal is to cook the onions until the natural sugars caramelize and the onions begin
to turn brown. They will cook down quite a bit
2 medium onions per person.
1 tsp. butter per 2 onions. If you use a non-stick pan you can reduce this by half.
Salt and Pepper to taste
A little brown sugar can be added if you like a sweeter onion.
Add green and red sweet peppers if you are going to use them as a topping
for Italian sausage.
Cut the onions in half then slice the halves making 'half moon' pieces. Put a large
skillet or sauté pan on medium heat. Add butter then onions. Cook for about
30 minutes stirring occasionally. Watch for the onions to start caramelize and turn brown.
Watch for burning. Cook to desired doneness. They can be made the day before
and heated in the microwave.
